Grundsätzlich sollten wir nicht anfangen, Software, die von einem Unternehmen hergestellt wird, als weniger frei zu bezeichnen, als Software, die von nicht gewerblich Tätigen hergestellt wird. Denn es ist sogar erwünscht, dass mit Freier Software Geld verdient wird.

Im Übrigen steht > 90 % des Codes von LibreOffice unter dem Copyright von Oracle (dies kommt auch durch die etwas ungewöhnliche Versions-Nummer zum Ausdruck) und vom Rest wird ein hoher Prozentsatz von Novell-Angestellten beigesteuert.
Was Debian paketiert, ist nicht Sache des OpenOffice.org-Projektes. Debian ist frei, jede Software zu paketieren, die seinen Richtlinien entspricht, oder es sein zu lassen. Auch der OpenOffice.org-/LibreOffice-Maintainer von Debian ist recht gut ausgelastet.
Im Übrigen ist die Installation von Wollmux unter GNU/Linux doch recht gut beschrieben und wohl auch gar nicht so schwer.
