Die Frage ist aber nun: gibt es abseits von etherpad noch andere freie Software (BSD, Apache, MIT, Vodkaware, AGPL, LGPL, GPL ... ), die so eine Art Office-Ersatz bieten kann und selbst zu hosten ist?
Du hast nicht gesagt, ob du die sehr gute gleichzeitige Multiuser-Fähigkeit von Google Docs benötigst. Wenn nicht, kannst du ein einfaches ODT Dokument auf deinem Webserver hosten und anderen den Zugang per FTP oder so einrichten. Natürlich braucht es dann eine Art Fahrplan, damit keine Versionskonflikte entstehen. Falls es doch passiert, mit dem "Dokument-Vergleichen" Feature von Libre Office kann man es dann flicken.
Naja. Es geht mehr um eine Reaktion auf den bunten Zoo, den die Leute mit Ihren Apples, Windows, Tablets, Linux etc. und dem bring-your-own-device-Entwicklungen der das erzeugt. Multiuser muss gar nicht so richtig stark, wird aber sicher in Zukunft vermehrt auftreten.
Bezüglich Energiekosten ist es effizient, wenn man die Bilder nicht einbettet sondern verlinkt, dann müssen sie nicht dauernd neu transferiert werden.
